Rainbow cupcakes!
Nikki's 19th birthday is on August 6th, and my 22nd birthday is October 10th. I'm not coming home for my birthday (because it's $90 for a round trip bus ticket, and I don't want to spend that), so I'm going to spend it with some of my friends. Actually, I'll be spending the few days after my birthday with them because my birthday is on a Thursday (ew. Seriously? Who has a birthday on a Thursday?) and I'll be in class all day (also ew. Who has class on their birthday?).
But anyway. Mom and Pete are throwing Nikki and I both a birthday party tomorrow night. I wanted to make cupcakes, and I wanted to try making rainbow cupcakes. So this is what I did all morning:
It was surprisingly simple to do, but VERY time consuming. If I had known it would take me two hours to make 16 cupcakes, I probably wouldn't have done it. (I lied. I probably actually would have done it still). I started making these right around 10:30 in the morning, and was taking them out of the oven around 12:30. And NO I did not cook them for two hours. They cooked for the 20 minutes that the box said to cook them for.
Anyway. Like I said, very simple. Mix up some white cake batter. After you mix it, split it evenly into six bowls. Using food coloring, make the batter in the bowls red, orange, yellow, blue, green, and purple. I used 4 drops in each one, but I think I could have done more, especially for the purple. After you have those all set, just layer it into the cupcake wrappers in the order you want it.
But a word of warning, make the layers REALLY THIN! If you don't make them thin, you end up filling the cupcake wrapper before you can get all the colors in. I learned that the hard way - the first one I made only went up to yellow!
I made chocolate mustaches, top hats, bow-ties, and glasses to decorate the cupcakes with tomorrow before we serve them after dinner. Also very simple to do. Melt some chocolate chips (DO NOT ADD ANYTHING TO THE CHOCOLATE CHIPS WHEN YOU ARE MELTING THEM. No butter. No cream. Nothing.) Once the chocolate is melted, put it into a ziplock baggie, and cut the corner of it. Then, on wax paper, make the designs you want. When you have your designs made, put them in the freezer (LAYING FLAT) until you need to use them (I'd say, probably about 10-ish minutes at the very least).
But yeah. Anyways. That's how I spent my morning today. And I had fun doing it. :)
